Jamaican Jerk Drumsticks

Ingredients:

  • 20 chicken drumsticks
  • 2 litres milk
  • 3 litres water
  • 750ml Barker’s Professional Jamaican Jerk Hot & Spicy Sauce

Method:

  1. Remove the ends of the drumsticks.

  2. Place the milk, water and drumsticks into a saucepan and bring to the boil. Simmer for 20 minutes.

  3. Place the Barker’s Professional Jamaican Jerk Hot & Spicy Sauce in a large mixing bowl, add the well drained drumsticks and coat in the marinade. Marinate for at least 4 hours or preferably overnight.

  4. Drain excess jerk marinade and either grill over charcoal or wood, or in a pre-heated 185°C oven for 30 to 35 minutes until tender.

  5. Using a pastry brush, glaze the drumsticks with more Barker’s Professional Jamaican Jerk Hot & Spicy Sauce.
