Gluten Free Coffee & Walnut Slice

Ingredients:

BASE

  • 250g Butter - melted

  • 1 cup Brown Sugar

  • 200g Condensed milk

  • 600g Rice Cookies – crushed in food processor

  • 1 cup coconut

  • ½ cup Barker’s Professional Cold Brew Coffee Syrup

  • ¼ cup cocoa 

TOPPING

  • Coffee buttercream

  • 500g butter

  • 1kg icing sugar

  • 2 shots coffee

  • ½ tsp salt

 Method:

  1. Mix together all base ingredients in bowl and press into slice tin until flat. Set in fridge while making the top.

  2. To make the top – cream the ingredients together until light and creamy.

  3. Spread onto slice base and place walnuts on top – try to space them so each individual slice has 3 walnuts on it.

  4. Slice into 4x10cm slices
